- 1/2 kilo carrots (cleaned and cut lengthway in half)
- 1 tbsp butter
- 2 cm ginger (grated)
- 1 garlic clove (pressed)
- 1 tbsp fresh coriander (chopped)
- 1 tbsp limejuice
- 1/2 tsp great lime rind
- salt to taste
- 1/2 cauliflower
- 4 tbsp vegetable oil
- 1 free range egg
- a few hands of bread crums
- some black pepper (freshly ground)
How to prepare the carrots:
- Steam the carrots for 10 minutes.
- Warm the butter in a saucepan and add the ginger and garlic for 1 minute.
- Add the fresh coriander, lime juice and lime rind with the butter, ginger and garlic.
- Add the sauce to the steamed carrots.
- Cook the cauliflower just to soften a bit.
- Put the bread crumbs, freshly ground black pepper and egg in a bowl and mix well.
- Add the pieces of cauliflower to the mixture.
- Heat the oil in a frying pan and fry until browned.
