For the weekend: a delightful and light Squid Dish


This dish is quick and easy to prepare. Just be careful the squid will not be overcooked and get rubbery.

What you need:
  • 500 gr squid
  • 100 gr celery
  • 100 gr carrots
  • 100 gr long beans
  • 4 tbsp chopped garlic
  • 4 tbsp finely sliced shallots
  • 2 tbsp of vegetable oil
  • 3 small red chillies (seeds removed end chopped)
  • 1 tbsp fish sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sugar

How to prepare it:
  1. Clean the squids (see Youtube for methods).
  2. Remove the beak and cut the tentacles from the head, just befor the eyes.
  3. Cut the fins from the body.
  4. Cut the squid in strips of 3 cm.
  5. Carve the fins every 1cm. It helps to make the fins tender while cooking.
  6. Blanch the celery, carrots and long beans in a large pan of salted water.
  7. Drain and set aside.
  8. Heat a wok on high fire. Add  the vegetable oil and stir fry the garlic for one minute. It can be lightly browned - not burned.
  9. Remove the garlic and set aside on a kitchen paper.
  10. Add the squid and fry for one minute.
  11. Add the shallots, chillies, celery, carrots, long beans, fish sauce, oyster sauce and sugar and fry for three minutes.
  12. Add the reserved garlic.
  13. Serve with my favourite basmati rice and enjoy!
