What you need:
- 500 gr squid
- 100 gr celery
- 100 gr carrots
- 100 gr long beans
- 4 tbsp chopped garlic
- 4 tbsp finely sliced shallots
- 2 tbsp of vegetable oil
- 3 small red chillies (seeds removed end chopped)
- 1 tbsp fish sauce
- 2 tbsp oyster sauce
- 1 tbsp sugar
How to prepare it:
- Clean the squids (see Youtube for methods).
- Remove the beak and cut the tentacles from the head, just befor the eyes.
- Cut the fins from the body.
- Cut the squid in strips of 3 cm.
- Carve the fins every 1cm. It helps to make the fins tender while cooking.
- Blanch the celery, carrots and long beans in a large pan of salted water.
- Drain and set aside.
- Heat a wok on high fire. Add the vegetable oil and stir fry the garlic for one minute. It can be lightly browned - not burned.
- Remove the garlic and set aside on a kitchen paper.
- Add the squid and fry for one minute.
- Add the shallots, chillies, celery, carrots, long beans, fish sauce, oyster sauce and sugar and fry for three minutes.
- Add the reserved garlic.
- Serve with my favourite basmati rice and enjoy!
