Bruschetta in the Sun


What you need:
  • 1 red onion (finely chopped)
  • 2 garlic cloves (crushed)
  • 1 small red pepper (fe rawit, finely chopped)
  • 1/2 kilo tomatoes (cut in pieces)
  • 1 tbsp red wine vinegar
  • 1 tbsp sugar
  • freshly grounded black pepper
  • 100 gr black olives (chopped)
  • 1 handful of basil
  • 6 thick slices of bread
  • 6 slices halloumi cheese (you can grill the cheese or fry it in olive oil)

How to do it:
  1. Cook the onion, garlic and red pepper in a frying pan with olive oil untill the onion is soft.
  2. Add the tomatoes and cook it on low heat for 40 minutes with a lit on. Stir it every 15 minutes and after 35 minutes leave the lit of. The sauce must be slightly moist in the end.
  3. After 40 minutes you can add the olives.
  4. After 45 minutes add the basil and cook for two more minutes.
  5. Roast the bread on a grillplate or in a hot frying pan.
  6. Roast the halloumi cheese on the grill plate, or you can fry them in a thin layer of olive oil.
  7. Serve the sauce on the slices of bread and top with the cheese.

ENJOY!!! With some fruity red wine.
