- 1 red onion (finely chopped)
- 2 garlic cloves (crushed)
- 1 small red pepper (fe rawit, finely chopped)
- 1/2 kilo tomatoes (cut in pieces)
- 1 tbsp red wine vinegar
- 1 tbsp sugar
- freshly grounded black pepper
- 100 gr black olives (chopped)
- 1 handful of basil
- 6 thick slices of bread
- 6 slices halloumi cheese (you can grill the cheese or fry it in olive oil)
How to do it:
- Cook the onion, garlic and red pepper in a frying pan with olive oil untill the onion is soft.
- Add the tomatoes and cook it on low heat for 40 minutes with a lit on. Stir it every 15 minutes and after 35 minutes leave the lit of. The sauce must be slightly moist in the end.
- After 40 minutes you can add the olives.
- After 45 minutes add the basil and cook for two more minutes.
- Roast the bread on a grillplate or in a hot frying pan.
- Roast the halloumi cheese on the grill plate, or you can fry them in a thin layer of olive oil.
- Serve the sauce on the slices of bread and top with the cheese.
ENJOY!!! With some fruity red wine.
