Sweet Thai Chicken Thighs

A delicious and super easy Thai chicken dish

What you need:

  • 4-5 chicken thighs (skin on, no bone and cut in bitesize pieces) 
  • 2 tbsp of vegetable oil
  • 1 stalk lemongras (chopped very fine)
  • 4 cloves of garlic (finely chopped)
  • 1/2 red onion (sliced)
  • 2 small chillies (sliced lengthway)

For the sauce:

  • 2 tbsp fish sauce
  • 2 tbsp sugar
  • 1/4 tsp black pepper

How to prepare it:


  1. Heat the oil in a hot pan and fry the chicken. Best to put the skin down and turn over untill the skin is brown and crunchy.
  2. Meanwhile mix the sauce so the sugar dissolves.
  3. When the chicken is cooked through, add the lemongrass, onions, garlic and chillies and cook untill the onion is soft.
  4. Add the sauce and cook for a few more minutes.
  5. Serve with steamed rice, some cucumber and top with coriander leaves.
