A delicious and super easy Thai chicken dish
What you need:
- 4-5 chicken thighs (skin on, no bone and cut in bitesize pieces)
- 2 tbsp of vegetable oil
- 1 stalk lemongras (chopped very fine)
- 4 cloves of garlic (finely chopped)
- 1/2 red onion (sliced)
- 2 small chillies (sliced lengthway)
For the sauce:
- 2 tbsp fish sauce
- 2 tbsp sugar
- 1/4 tsp black pepper
How to prepare it:
- Heat the oil in a hot pan and fry the chicken. Best to put the skin down and turn over untill the skin is brown and crunchy.
- Meanwhile mix the sauce so the sugar dissolves.
- When the chicken is cooked through, add the lemongrass, onions, garlic and chillies and cook untill the onion is soft.
- Add the sauce and cook for a few more minutes.
- Serve with steamed rice, some cucumber and top with coriander leaves.
