Jatrovy Krem - Czech Liver Soup


Jatrovy krem is a traditional calf liver soup.

What you need:
  • 300g calf liver
  • 1 tbsp butter
  • 1 small onion
  • 1,5 tbsp flour, salt
  • 2 cups vegetable broth
  • 0,5 cup milk
  • 1 or 2 fresh egg yolks
  • 1 slice of white bread, cut in small squares
  • a handful of rocket salad
How to prepare it:
  1. Fry in hot butter the chopped onion and add the chopped liver until done and take the liver apart on a plate.
  2. Add flour to the remaining onions and fry until foamy and add the vegetable broth, salt, and allow to cook at least for 15 minutes.
  3. Grind the liver, add to the soup and simmer for 10 minutes.
  4. Blend the soup untill really smooth.
  5. Mix the egg yolk in the milk and add to the soup.
  6. Then warm the soup, but not boiling.
  7. Heat a frying pan and add the pieces of white bread and fry until browned. 
  8. Serve the soup in a plate, add the bread and decorate with the rocket salad.
