What you need:
- 300g calf liver
- 1 tbsp butter
- 1 small onion
- 1,5 tbsp flour, salt
- 2 cups vegetable broth
- 0,5 cup milk
- 1 or 2 fresh egg yolks
- 1 slice of white bread, cut in small squares
- a handful of rocket salad
How to prepare it:
- Fry in hot butter the chopped onion and add the chopped liver until done and take the liver apart on a plate.
- Add flour to the remaining onions and fry until foamy and add the vegetable broth, salt, and allow to cook at least for 15 minutes.
- Grind the liver, add to the soup and simmer for 10 minutes.
- Blend the soup untill really smooth.
- Mix the egg yolk in the milk and add to the soup.
- Then warm the soup, but not boiling.
- Heat a frying pan and add the pieces of white bread and fry until browned.
- Serve the soup in a plate, add the bread and decorate with the rocket salad.
