Cod in fresh Tomato Sauce

Here is a chinese-like dish. Delicious with steamed rice.


What you need:

  • 400 gr cod (4 or 5 pieces)
  • salt
  • freshly ground black pepper
  • flour
  • 400 gr fresh tomatoes (peeled and cut in pieces)
  • 4 tbsp olive oil
  • 2 tbsp tomato puree
  • 2 shallots (finely chopped)
  • 3 garlic cloves (finely chopped)
  • 1 tbsp ricewine
  • 1 tbsp light soy sauce
  • 1 tbsp chilli bean sauce
  • 1 tbsp of sugar
  • 1 handfull fresh basil

How to prepare it:
  1. Dry the pieces of cod and sprnkle them with salt, pepper and flour. Shake off the excess flour.
  2. Put the the tomatoes in hot water for two minutes. Then peel the skin and cut them in pieces. Take away the tomato juice and set it aside.
  3. Make a cup of tomatojuice by mixing the puree with water and the fresh tomato juice.
  4. Heat a wok untill hot. Put in the olive oil and add the cod. Fry them for a about 5 minutes. Turn them over and brown them on the other side (also for about 5 minutes). Take them out and drain them on tissue.
  5. Leave one tbsp of olive oil in the wok and fry the shallots and garlic for two minutes.
  6. Then add the chilli bean sauce, tomatoes, the prepared tomato juice and the fresh tomato juice, rice wine, soy sauce and sugar. Cook for 6 minutes.
  7. Pour the sauce over the fish and garnice with the freh basil.
  8. Serves well with steamed rice, mixed with a dash of sweet soy sauce and sesame oil.
