Here is a chinese-like dish. Delicious with steamed rice.
What you need:
- 400 gr cod (4 or 5 pieces)
- salt
- freshly ground black pepper
- flour
- 400 gr fresh tomatoes (peeled and cut in pieces)
- 4 tbsp olive oil
- 2 tbsp tomato puree
- 2 shallots (finely chopped)
- 3 garlic cloves (finely chopped)
- 1 tbsp ricewine
- 1 tbsp light soy sauce
- 1 tbsp chilli bean sauce
- 1 tbsp of sugar
- 1 handfull fresh basil
How to prepare it:
- Dry the pieces of cod and sprnkle them with salt, pepper and flour. Shake off the excess flour.
- Put the the tomatoes in hot water for two minutes. Then peel the skin and cut them in pieces. Take away the tomato juice and set it aside.
- Make a cup of tomatojuice by mixing the puree with water and the fresh tomato juice.
- Heat a wok untill hot. Put in the olive oil and add the cod. Fry them for a about 5 minutes. Turn them over and brown them on the other side (also for about 5 minutes). Take them out and drain them on tissue.
- Leave one tbsp of olive oil in the wok and fry the shallots and garlic for two minutes.
- Then add the chilli bean sauce, tomatoes, the prepared tomato juice and the fresh tomato juice, rice wine, soy sauce and sugar. Cook for 6 minutes.
- Pour the sauce over the fish and garnice with the freh basil.
- Serves well with steamed rice, mixed with a dash of sweet soy sauce and sesame oil.
