Bramborak or Rosti

A lovely potato pancake
 
Dear followers, this is a fresh potato pancake recipe. Actualy I made a fusion of a swiss rosti and a czech bramborak. I use some extra spices and ingredients. It is really simple to prepare and  spectacular to eat.



What you need for the potato pancake:
  • 2 large potatoes
  • one spoon goose or duck fat
  • 2 garlic cloves
  • 1/2 banana sjalot
  • grounded black pepper
  • salt
  • 1 tsp majoran
  • 2 tsp mixed herbs (grounded dried red pepper, cumin, kardemon)
For the steak (I used kangeroo)
  • 2 steaks
  • some butter
  • grounded pepper
  • salt
For the cranberry sauce
  • 300 gr cranberries
  • 1/2 tsp of mixed spices
  • 150 gr sugar
  • 1 tsp honey
How to make the cranberry sauce:
  1. Put the cranberries in a small pan, add some water.
  2. Mix all the ingredients and stirr whilecooking.
  3. Finished when all whole berries are vanished.

How to make the potato pancake:
  1. Peel the potatoes and rasp them in a bowl. Put the rasped potatoes in a cloth and squeeze the liquid from the potatoes. 
  2. Put back in the bowl and mix well with all the ingredients (except the goose fat).
  3. Heat a frying pan and add the fat. Then add the potato mix. Form it to a pancake and press to a 1 cm pancake.
  4. When you see the sides of the pancake are brown (after about 8 minutes), you can turn the pancake and bake the other side.
  5. Meanwhile strike some fat on the sides on the pan, so it keeps the downside greasy.

How to make the steak:
  1. Heat a frying pan and add the butter.
  2. Put salt and pepper on the steak.
  3. When the butter is foaming, add the kangeroo steak.
  4. The steak can be baked shortly (about two minutes each side), because otherwhise you will be eating a leather shoe).
  5. Rest the steak for 5 - 10 minutes.
How to serve: Serve the pancake hot and with a glass of red wine. BON APPETIT.
