These potato cakes you can eat on the streets in Rajasthan. You can make
all kinds of variations. The snacks are a good starter or you can serve
them as a sidedish.
What you need:
- 500 gr sweet potatoes, cut into large pieces
- 150 gr peas
- 4 tbsp oil
- 2 green chillies, finely chopped
- 1/2 red onion, finely chopped
- 2 cm of ginger, grated
- 2 kaffir lime leaves, finely chopped
- 1 tsp ground tumeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp garam masala
- 2 tbps chickpea flour (besan flour)
- 1 tbsp lemon juice
- Cook the potatoes untill tender enough to mash.
- Drain well untill they are dry, but still warm.
- Cook the peas and drain.
- Mash the potatoes and add the peas.
- Put 1 tbsp of oil in a small pan and fry the chilli, onion, ginger and spices for 1 minute, or untill really aromatic.
- Add this to the mash with the kaffir lime leaves and the flour and mix well.
- Mix in the lemon juice and some salt to taste.
- Make small balls of it and shape to patties.
- Heat 3 tbsp of oil in a frying pan and add the patties in batches.
- Fry them on each side until crisp and golden brown.
- Serve hot.
